CHEESY
PICKLED PEPPER SCONES
3 c flour
6 tsp baking powder
125 gm butter
pinch sea salt
350gm sharp cheese, grated
180gm pickled peppers, roughly chopped
1 tbsp chives or parsley, finely chopped
1 c greek yoghurt
1/2 - 1 c water
combine flour, baking powder, salt and butter in a bowl. using your hands rub the butter in to the mix until you have a light fine crumb.
add cheese, pickled peppers and herbs. stir to combine.
add yoghurt and 1/2 cup water. combine with a large spoon. add more water if the mix is too dry.
tip out onto a dusted bench. dust the top with more flour. gently shape the dough into a rectangle. cut cut 8 big scones or 12 smaller scones.
arrange on a baking paper lined tray.
brush with a little milk. top with a pickled pepper and finely grated cheese on top.
fan bake at 175 for 25 minutes. don’t open the oven while they are cooking.
