BABY BLUEBERRY PANCAKES WITH HONEY BUTTER CARAMEL
1 egg
1 tbsp oil / melted butter
1 tbsp golden caster sugar
150 ml milk
1 c flour
1 heaped tsp baking powder
1 c blueberries
1 tsp flour
Honey Butter Caramel
100 gm butter
1 heaped tbsp honey
Sea salt
For the pancakes whisk egg, oil, sugar and milk till just combined. Add flour and baking powder. Mix until JUST combined. Don’t beat the shit out of it otherwise you’ll have flat rubber rounds.
In a seperate bowl toss the blueberries in the flour.
Warm a pan and lightly grease.
Drop tiny spoons and cook quickly. Transfer to a teatowel to keep warm.
For the caramel add the butter into a small pan. Melt first before bringing it to a gentle simmer. Keep swirling the pan at the same time to toast the soilds. Keep your eye on this it only takes a minute or so. You can lift the pan off the heat and swirl the same time. Once you see golden crumbs and smell the nuttiness of the butter, add the honey and tiny pinch of salt. It will bubble up so be careful. Take off the heat and stir to combine.
When you are ready to serve just warm it up.
Pour hot caramel over warm pancakes and serve.
